Temperature may range between 95 degrees during the day to 20 degrees at night. With fluctuations in temperature like this, think of layering your clothing. We recommend wearing T-shirt under layer, a lightweight long sleeve shirt over that, Jeans or comfortable pants (no heavy seam on the back yoke like some Levi styles). You'll need a long sleeve fleece shirt or hoodie and a wind shell jacket with a hood for tying on your saddle. Footgear should be well broken in, comfortable to wear, and waterproof (like Goretex). All your spare gear should be packed in a water-resistant duffel bag or two. A small fanny or day pack is nice to carry your camera, lunch, water bottle, etc. when your duffel is stowed on the mules.
